What do you feed your Black Angus?

Our cows eat a salad bar of fresh grass in the pasture nine months of the year when grass is growing in our area. In the dormant winter months, they eat hay which is dried grass and have free access to pastureland all year round.  The grass and hay are fertilized organically.  They drink spring water and are offered free choice organic salt and minerals.

How long can I store the frozen beef?

It can be frozen for several years when it is vacuum sealed.  We recommend buying what your family can use in a nine month to a year period. For a family of 4 or more, we suggest purchasing a half or whole beef.

How do you suggest that I defrost the beef

We suggest that you take the meat out of the freezer and put into a refrigerator for a day or two to defrost it slowly. This is the best way to retain the juiciness of the meat.

Do you have grass fed beef available year round?

We currently do offer beef every month but we are gradually changing to hopes of offering it mainly in the spring/early summer and fall/late winter as this is when most of our calves are ready.

What is marbling and why is it important?

Marbling is the intermuscular fat or white flecks that you see in the middle of the cut of beef.  The Black Angus meat gets much of it's unique flavor and tenderness from marbling.   Marbling helps to keep the meat more tender and juicy after cooking. For best results, use low heat and cook slowly.

What is the dressed weight?

The dressed weight is the hot hanging weight, which is after the animal is killed removal of the skin, legs, head, etc.  This is just like the carcasses that are hanging in the first Rocky movie.

If I have a butchering date, how soon after that can I expect to pick up my beef?

It will be about two weeks after the appointment.  The Butcher will contact you to arrange pick up and the payment for the butcher's services.

Are your animals grass fed and grass finished?

Our grass fed animals are finished with corn at the end of their feeding program.

If you desire a grass fed and grass finished animal, that is available for select number of animals. When the calf is seven months of age, you may put a deposit on it to be raised strictly on grass with no corn.
