Buying a quarter cow is highly worth it if your household eats beef regularly as it locks in premium cuts (like ribeyes and filet mignon) and standard ground beef at a single flat rate. This will save you a great deal of money compared to premium supermarket prices.
The weight of a quarter cow obviously depends on the total weight of the animal, but the typical weight is around 200 lbs. This is considered the dress weight or the hot hanging weight. Our current price (2026) is $5.50 per pound payable to Locust Lane Farm. Add to that the approximately dollar per pound payable to the Butcher. The weight of the take-home meat is usually about 60% of the dress weight, so you would ultimately be taking home about 120 lbs. of packaged meat, give or take 30 lbs.
The cost for the pre-processed dressed quarter would be paid to Locust Lane Farm on the date of the butchering appointment, which is when we'll know the exact dressed weight. Several payment options besides cash are available.
The butcher will custom cut the meat to your specifications. Butchering instructions are due a week before the butchering appointment and the pick up would be typically be two weeks after the butchering appointment. The butcher will contact you to arrange pick up. The balance of the butchering fees would be be paid to the butcher at that time.
